主厨 Paul Pairet

主厨 Paul Pairet 以卓越创新著称,携两间备受瞩目的概念店——Moutarde 与 Sundae Royale 入驻圣淘沙名胜世界,开启新的职业版图。

他出生于法国,并在此学习厨艺,取得了许多成就。其中,最为人所熟知的便是开创了米其林三星餐厅——Ultraviolet。除了这个传奇先锋之作外,他还主理多间备受赞誉的餐厅,包括上海的经典海鲜牛排馆 Mr & Mrs Bund 和法式小酒馆 Polux 以及巴黎 Hôtel de Crillon 的烧烤餐厅 Nonos & Comestibles。

Chef Greg Robinson​

Driven by experience and precision, Chef Greg Robinson has spent nearly two decades shaping modern fine dining. Trained in the United States, he moved to Shanghai in 2006 and began a long‑standing collaboration with Chef Paul Pairet.

While serving as Head Chef and Chef Paul’s executive right-hand, Greg played key roles in projects such as Ultraviolet. Now based in Singapore, Greg continues to craft refined, immersive dining through thoughtful creativity, operational excellence, and a deep commitment to hospitality.

Start at the cold‑starter station, then follow the aroma to the carvery, where our famed big‑format roasts take centre stage.

Want eggs your way? Extra sides? Free-flow beverages? A sweet something? Just wave and order from our service team; we’ll prepare them fresh in the kitchen.

Enjoy while helping us keep brunch sustainable. Excessive food waste may incur a 10% service charge.
