Celebrity Chef Scott Webster
The world-famous chef-restaurateur is the face of eclectic Australian cuisine.
Part of what makes the chef’s cuisine so iconic is his love for Australia’s ingredients, and he goes to great lengths to ensure that his restaurants use only the best. His passion has led him to personally play a part in raising the cattle we use. In fact, he also makes trips to the outback to source unique sustainable products like Humpty Doo Barramundi, and indigenous flavours unique to The Land Down Under – like wattleseeds, lemon myrtle, akudjura tomatoes, quandongs and rosella flowers.

Always full of curiosity, Chef Fong loves experimenting with ingredients to enhance the dining experience – and he has done so at the highest levels. His explorations started in his first kitchen job at the iconic Equinox Restaurant. Taken under the wing of Michelin-starred chef-restaurateur Michel Portos, he studied the techniques of the French master as they worked to turn raw ingredients into exquisite plates of pleasure.
Chef Fong brought his skills to acclaimed restaurant Osia Steak & Seafood Grill in 2010. Working in tandem with celebrity chef Scott Webster, he envisioned and handcrafted the restaurant’s hearty creations. Noticing how Osia’s relaxed atmosphere promoted conversations, Chef Fong pioneered the family-size meat and seafood sharing plates that the restaurant is now known for, to further encourage guest-to-guest interaction and spice up meals with human warmth.
