Wondering what’s the specialty of these grilling techniques? Warayaki (‘Wara’ - rice straw and ‘yaki’ - burning) uses a straw as the main fuel source instead of charcoal or wood. Originating from Kochi Prefecture, Warayaki grilling entails searing the ingredients briefly over a high-temperature flame, giving a unique smoky aroma. Irori grilling is done by grilling food over an open sunken hearth, typically used in old Japanese homes and inns. Skewered fish, meats, and vegetables are arranged around the glowing embers, allowing for slow, even cooking.
