
Chef's Recipe | Sweet Soufflé Omelette With Strawberry Yoghurt
Now that our choices for desserts are limited to takeaways, many of us have been unable to satisfy our sweet tooth. But fret not – here’s a delicious recipe for sweet soufflé omelettes by Chef Kenny Kong from Sessions!
The French-style treat is light, fluffy, and made with egg yolks and beaten egg whites – perfect for a hearty breakfast or as an indulgent dessert for the kids. More importantly, it’s tasty and easy to prepare.
Equipment/ Utensils | Ingredients for Omelette | Ingredients for filling |

- Measuring spoons - 2 mixing bowls - Whisk - Nonstick pan - Silicone spatula - Kitchen knife - Baking Oven - Juice blender |
- 2 medium egg whites - 1 medium egg yolk - 3 tbsp plain or flavoured yogurt - 3 tbsp caster sugar - 2 tbsp corn starch - 1 tsp butter (for greasing the nonstick pan) |
- 10 fresh strawberries - 4 cherry tomatoes - 1 Lemon - Caster sugar (to taste) - Herbs of your choice - Icing sugar - Black pepper |
Steps for Sweet Soufflé Omelette |

![]() 1. Preheat the oven to 220°C and grease the nonstick pan with butter or vegetable oil |
![]() 2. Cut the strawberries in half and marinate with sugar and lemon |
![]() 3. Crack eggs in a separate bowl and separate the whites and yolk |
![]() 4. Add the sugar to the egg white gradually and whisk the mixture gently |
![]() 5. Add corn starch to the egg white mixture and mix well to achieve a meringue texture |
![]() 6. Take note not to over-beat the meringue - stop once you hit stiff peaks |
![]() 7. Stir the meringue gently into the egg yolk |
![]() 8. Mix it all together till you achieve a smooth texture |
![]() 9. Pour the mix into the pan and level off gently |
![]() 10. Place the pan into the preheated oven |
![]() 11. Leave it to bake for approximately 6 minutes at 220°C – the soufflé omelette can be removed from the oven when it turns golden brown |
![]() 12. Decorate your soufflé omelette with strawberries and fresh yoghurt |
![]() 13. Then, fold the soufflé in half and sprinkle your choice of garden garden on top. |
![]() 14. Next, puree tomatoes and fresh strawberries with fresh lemon juice |
![]() 15. You can now sprinkle fresh fruit puree onto your dish |
![]() 16. You may also choose to dust some icing sugar and a dash of black pepper on top |
![]() 17. You’re now ready to tuck into your homemade dessert with family! |
