    Osia is all about thinking out of the box. Famous Australian Celebrity Chef Scott Webster teams up with Chef de Cuisine Douglas Tay to present an innovative a la carte menu that combines Asian influences and western culinary techniques with finesse.

    The open-kitchen concept features prominently in the restaurant, enhancing the culinary experience for diners as they have the pleasure of watching the chefs in cooking action.

    Using fresh Australian produce, signature dishes include the Sea Perch, Seafood Ice Experience, Tasmanian Milk Fed Lamb Short Loin and Neck, and Valrhona Hot Chocolate Soup. The restaurant also offers a superb ceviche menu with a sensational array of fresh seafood cured with refreshing citrus juices and spices.

    Scott Webster opened the re-birth of his famous London restaurant OSIA in March 2010 at Resorts World™ Sentosa's World Square.

    Epitomising the face of eclectic Australian cuisine is celebrity chef and successful entrepreneur, Scott Webster. He is the main powerhouse behind Australian Culinary Consultants (ACC), which has planned and developed dining concepts for some of the world's major hospitality projects including Hyde Park Corner in London for the InterContinental group and the Westin Hotel in Sydney on the former GPO site. Through hotel and airline food promotions, assisted menu planning, trade exhibitions, seminars and lectures abroad, as well as through educational tours throughout Australia for executive chefs and importers, ACC has assisted in placing Australia at the forefront of many a chef's preferred supplier list.

    Chef Webster's latest accomplishment was opening the highly-anticipated Carrington Place in New South Wales, Australia, in April 2009 with his wife, Jennifer. A beautifully restored and modern guesthouse, the dining room serves contemporary cuisine using superb primary products with indigenous flavours from Australia and wines from the renowned Hunter Valley region. As a chef, he has an impressive career track throughout Europe, the USA, Canada and Asia and having had the privilege of working at the legendary Savoy Hotel in London, UK, and at the Grand Hotel in Leysin, Switzerland. In 1998, he was the coordinating chef for the athletes' village at the Winter Olympic Games in Alberta, Canada. Together with Jennifer, the couple launched The Young Outback Chef Scholarship in 2006, creating career opportunities for promising young chefs from around regional Australia bi-annually. Also known as the founder behind The Masters of Australian Food and Wine, a leading bi-annual gastronomic event held at Crown Casino Melbourne, Chef Webster continues to change the landscape of the Australian culinary scene.

    Chef Douglas Tay has a decade of F&B experience and has won several gold medals at the Culinary Olympics and WA Oceanafest 2009, clinched second place at the WACS Global Chefs Challenge 2009, Asia Finals, and was a nominee at the 2008 Hospitality Asia Platinum Awards for Most Passionate Western Cuisine Chef.

    Described as an enthusiastic and innovative chef, Chef Tay has been trained in the 'new school' of cuisine and consistently looks 'out of the kitchen' for ideas that he can incorporate into his menu. His constant pursuit for perfection means he takes no short-cuts in his quest to provide his guests with the utmost in quality food and service. His novel out-of-the-box culinary ideas continually astound guests as he creates extraordinary flavours by putting together the freshest ingredients.
